Herring skewer with boiled potatoes

Ingredients for 4 servings:

  • 1 small jar of mayonnaise
  • 1 cup of cream
  • 2 m.-sized onion(s)
  • 2 apples, tart (e.g. Cox, Boskoop)
  • 1 bunch dill, finely chopped
  • salt and pepper
  • Sugar
  • 3 gherkins
  • 1 jar fish fillet(s) (Bismarck herring)
  • e.g. lemon juice or vinegar
  • 800 g potatoes, small (e.g., triplets)

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 30 minutes

Remove the herring from the jar and drain, then set the infusion aside. Combine the mayonnaise and cream with the chopped dill, stirring in a little of the infusion to taste. Peel the onions and apples. Finely slice the onions. Coarsely grate the apples, drizzle with a little lemon juice, and mix both into the sauce. Season to taste with salt, pepper, and sugar. Cut the herring into bite-sized pieces, add to the sauce, and let it marinate for at least 5 hours. Cook the boiled potatoes and serve.
