( hearty sour cream cake )
Boil the potatoes and then mash them, then mix in the quark, sour cream, eggs, flour, and salt. Blend until smooth with a mixer. Prepare the bread dough (500g) as directed on the package. Once it’s risen, roll it out onto a baking sheet lined with paper. Spread the potato quark mixture onto the bread dough and sprinkle with poppy seeds. Fry some bacon or pork belly in a pan and scatter the cubes over the mixture. Place the whole thing in an oven preheated to 200°C and bake for about 30 minutes, until it starts to brown slightly. Of course, coffee is a must in Hesse, and it’s served with it.
