Ingredients for 1 servings:

  • 6 m.-sized eggs
  • 175 g sugar
  • 400 g hazelnuts, ground
  • 2 tsp baking powder
  • 1 packet of vanilla sugar
  • 2 tbsp breadcrumbs, for the form
  • Fat, for the shape
  • e.g. powdered sugar, for dusting

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Simple sponge cake without butter or flour

Separate the eggs. Whisk the egg yolks, sugar, and vanilla sugar until frothy. Stir in the hazelnuts. If the batter is too heavy, thin it with a little milk. Beat the egg whites until stiff and fold in. Add the baking powder. Grease a loaf pan and sprinkle with breadcrumbs. Pour in the batter and smooth it down. Bake in a preheated oven at 175°C for about 60 minutes. Dust with powdered sugar, if desired.
