  • 1 ½ tbsp water
  • ½ tbsp lemon juice
  • Pepper, white
  • Salt
  • Cayenne pepper
  • 100 g butter, liquid and clarified
  • 1 egg yolk

This recipe is designed for the Monsieur Cuisine food processor. Whisk together water, lemon juice, white pepper, salt, and cayenne pepper for 1 minute at 80°C on speed 3. Then add the egg yolk and whisk for 3 minutes at 80°C on speed 3. Simmer for another 5 minutes at 70°C on speed 3, then slowly add the clarified butter. Then whisk for another 30 seconds on speed 5. This dish goes well with asparagus, potatoes, or vegetables.
