Homemade curry sauce

Ingredients for 6 servings:

  • 1 tbsp olive oil
  • 1 can of tomato paste, 125 g
  • 2 tbsp curry powder
  • 1 tbsp cayenne pepper
  • 250 ml orange juice
  • Vegetable broth, granulated
  • 2 star anise
  • salt and pepper
  • Sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Heat olive oil in a saucepan and sauté tomato paste over medium heat. Stir in curry powder and cayenne pepper and deglaze with orange juice. Stir in some granulated stock, add star anise, bring to a boil, and simmer for about 2 minutes. Season to taste with salt, pepper, and sugar. If the sauce becomes too thick, simply thin with water.
