Ingredients for 1 servings:

  • 750 ml vodka
  • 1 lemon(s), organic
  • 1 lime(s), organic
  • 10 g fresh ginger
  • 2 tsp juniper berries
  • 2 tsp coriander seeds
  • 2 cardamom pods
  • 1 tsp black peppercorns
  • 1 stalk(s) cinnamon
  • 1 bay leaf
  • 1 small chili pepper(s), dried
  • 1 small rosemary sprig(s)
  • 1 tsp chamomile (chamomile flowers), dried

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

Wash the lime and lemon with hot water and then dry them. Then, ideally using a zester or lemon peeler, peel off the zest in thin strips, taking care not to peel off any of the white pith. Peel and slice the ginger. Roast the juniper berries, coriander seeds, cardamom, peppercorns, and cinnamon in a non-stick pan over high heat without any fat. Remove from the heat and let cool. Place the lemon and lime zest, ginger, toasted spices, chamomile flowers, rosemary sprig, chili pepper, and bay leaf in a 1-liter screw-top jar and fill with the vodka. Let it steep in a cool, dark place for about 12 hours. Once the time has elapsed, pour the gin through a funnel lined with cheesecloth or a filter bag (or alternatively, kitchen paper) and pour into a clean bottle.
