Homemade Grain Crackers

Try these crispy fresh grain crackers with hummus and tomato salsa

Grain crackers

Ingredients

  • 120 g cornmeal
  • 75 g sunflower seeds
  • 75 g sesame, white
  • 75 grams of flaxseed
  • 1 tbsp spice mix (e.g. aniseed, fennel, caraway, coriander or chopped rosemary, thyme …)
  • 3/4 tsp salt
  • 50ml olive oil
  • 300 ml boiling water

Preparation

  • Preheat oven to 150C
  • Mix the dry ingredients well, stir in the olive oil, and then the boiling water.
  • Spread thinly with a spatula on a baking tray lined with parchment paper.
  • Depending on the oven, the crackling takes 45 to 60 minutes.

Humus

Ingredients

  • 1 large can of chickpeas
  • 1 tbsp tahini (sesame paste)
  • 2 cloves garlic
  • olive oil
  • 1 lemon
  • cumin

Preparation

  • Drain the chickpeas and reserve half of the stock.
  • Blend with tahini, garlic, olive oil, and lemon juice.
  • Add the zest of the lemon and season with cumin, salt, and pepper

Tomatensalsa

Ingredients

  • 4 tomatoes
  • 2 shallots
  • 3 cloves of garlic
  • 1 lemon
  • 1 jalapeno
  • 2-3 sprigs of cilantro
  • 2-3 sprigs of basil
  • 2-3 sprigs of flat-leaf parsley
  • 1 dash of olive oil
  • Salt pepper

Preparation

  • Remove the stalk from the tomatoes.
  • Finely chop all ingredients, mix, and taste.
