Homemade muesli

Ingredients for 1 servings:

  • 50 g almonds
  • 100 g raisins
  • 100 g walnut kernels, roughly chopped
  • 50 g pumpkin seeds
  • 50 g sunflower seeds
  • 50 g butter
  • 1 tsp cinnamon powder
  • 1 pinch of sea salt
  • 50 g chia seeds
  • 50 g flaxseed meal
  • 50 g cocoa nibs, optionally dark chocolate 70%

Working time approx. 30 minutes; Total time approx. 30 minutes

makes about 10 servings

Roughly chop the walnuts and chop the almonds. Roast in a dry pan until a nutty aroma arises. Add the sunflower seeds, then the pumpkin seeds. Stir until the pumpkin seeds pop (you’ll hear a slight crack), then add the butter and raisins and reduce the heat. Stir in the remaining ingredients. Finally, add the cocoa nibs. I usually use dark chocolate with 70% cocoa content because cocoa nibs aren’t always available. Once the chocolate has melted, let everything cool in the pan. Makes about 10 servings; I usually make double the batch. The muesli tastes delicious mixed into yogurt.
