Preheat the oven to 50 degrees Celsius (122 degrees Fahrenheit). Peel the onions and slice them very thinly. This is best done with a truffle slicer. Arrange the onion slices on a rack lined with baking paper. The slices should not be stacked on top of each other. Dry in the oven at 50 degrees Celsius (122 degrees Fahrenheit) for 5 hours. While doing this, wedge a wooden spoon into the oven door to allow the moisture to escape. The slices must be thoroughly dry. Allow to cool and grind to a powder in a mortar or blender. Stored in a sealable jar in a cool, dark place, the powder will keep for about 12 months.
