Homemade soy yogurt

Ingredients for 1 servings:

  • 200 ml soy milk (soy drink), unsweetened
  • ½ tsp, leveled guar gum
  • Sweeteners
  • Juice (beetroot juice), a few spoons of it

Whisk the guar gum into the cold soy milk. Bring to a boil while stirring, then remove from the heat. Cool and refrigerate. A few tablespoons of beetroot juice will give it a more appealing color. If you don’t like the typical soy taste, you can use other plant-based milks and add food flavoring or sweetener. It tastes just like unsweetened soy yogurt from supermarkets and organic stores, but costs a fraction of the price to produce and doesn’t contain the numerous additives found in store-bought soy yogurt. It has a slightly thicker consistency than regular yogurt, but you can adjust this to your taste by varying the amount of guar gum. 90 kcal per serving.
