Homemade spaetzle

Ingredients for 10 servings:

  • 500 g flour
  • 20 g salt
  • 8 eggs
  • 100 ml milk or water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Whisk the sifted flour and all other ingredients into a very smooth batter until it bubbles (make sure there are no lumps). Add the batter to boiling salted water, either using a spaetzle slicer, a spaetzle machine, a spaetzle press, or scraping it off a board. Shake the finished spaetzle into a sieve and let it drain. My tip: Toss the spaetzle in butter and season with salt and nutmeg.
