Ingredients for 1 servings:

  • 125 g honey
  • 65 g margarine
  • 2 eggs
  • 125 g sugar
  • 2 tbsp rum
  • 200 g flour, type 550
  • 100 g oat flakes, fine
  • 2 tsp gingerbread spice
  • 2 tsp baking powder
  • 500 g apples, grated
  • 100 g almond(s), chopped
  • 100 g raisins
  • 3 tbsp sugar
  • 150 g dark chocolate coating
  • Almonds, whole for decoration

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

[26 cm springform pan]

Melt the honey and margarine, then let cool. Beat the eggs with the sugar and rum until frothy. Combine the flour, oats, gingerbread spice, and baking powder. Stir the honey and fat mixture into the egg mixture. Mix the grated apples, almonds, washed raisins, and sugar. Pour half of the batter into a lightly greased springform pan. Spread the apple mixture on top. Pour the remaining batter over the batter. Bake the cake at 190°C for about 40 minutes. Let cool. Cover with melted chocolate and decorate with almonds.
