Fig jam with red wine

Ingredients for 6 servings:

  • 750 g fig(s), fresh
  • 125 ml red wine
  • 1 stalk(s) cinnamon
  • 2 anise (star anise)
  • 100 g sugar
  • 1,000 g gelling sugar
  • 1 lemon(s), juice and grated peel

Instructions

Working time approx. 25 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 25 minutes

Wash the figs, dry them, and cut them into small pieces. Add the red wine, cinnamon stick, star anise, and sugar. Cover and let it steep in a cool place for 4-6 hours or overnight. Place everything in a large pot, stir in the gelling sugar and grated lemon zest. Boil gently for 4-6 minutes, stir in the lemon juice, and serve while still hot. Of course, remove the spices before filling. This is easiest if you cook them in a cheesecloth bag. Depending on the size of the jar, you’ll have four large or six smaller jars of delicious fig jam.
