Honey oat cookies

Ingredients for 2 servings:

  • 200 g oat flour, gluten-free
  • 50 g oat flakes, gluten-free
  • 70 g coconut oil
  • 1 tbsp, heaped almond butter
  • 1 egg(s)
  • 1 pinch of vanilla
  • 100 g honey

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Combine all ingredients in a bowl and knead into a firm, but not too crumbly, dough. Refrigerate for 15 minutes to make the dough easier to work with. Meanwhile, preheat the oven to 200°C. Then, by hand, shape the dough into a log (approx. 3-4 cm in diameter). Cut the cookies at 1 cm intervals, flatten them slightly, and place them on a baking sheet. Bake at 200°C for about 10 minutes.
