Ingredients for 20 servings:

  • 200 g flour, sifted
  • 200 g sugar
  • 200 g butter
  • 4 eggs
  • 1 small carrot(s)
  • 1 cup chocolate shavings
  • ½ pack of baking powder
  • 1 packet of vanilla sugar
  • 200 g hazelnuts, ground
  • 1 shot of milk
  • 200 g powdered sugar
  • 1 tsp orange juice
  • some food coloring, red and yellow
  • possibly water

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Children’s treat that should not be missing at any Halloween party

Peel and finely grate the carrot. Beat eggs, sugar, vanilla sugar, and butter until fluffy. Sift flour and baking powder and stir in. Add carrots and nuts, thin with milk if necessary (the batter should be slightly runny), and fold in chocolate shavings. Fill small paper baking cups or a muffin tin (grease and breadcrumb the tin) with the batter halfway. Bake at 180°C (350°F) for about 20-30 minutes. Glaze: Sift icing sugar and mix with orange juice and a few drops of food coloring to create a vibrant orange color until smooth. Add a little more water if necessary. Brush the icing onto the slightly warm muffins to help it spread. Decorate the muffins with faces made from small candy pearls or with chocolate shavings. Wrapped beautifully in foil, these muffins can be given as a gift to children as they go door-to-door.
