Hosteiner-style lentil soup

Ingredients for 4 servings:

  • 350 g lentils
  • 500 g smoked pork
  • 2 onions
  • 1 bunch of soup vegetables
  • 1 tsp fat
  • 2 large potatoes
  • 150 g prunes
  • 3 tbsp vinegar
  • 1 tsp sugar
  • Salt
  • Pepper, ground, black
  • 1 jar wine, red

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Soak the washed lentils in 2 liters of cold water the night before. The next day, bring the soaking water and the whole, washed smoked pork to a boil and simmer for 45 minutes. Remove the meat. In the meantime, clean and finely chop the onions and vegetables, and fry them briefly in hot fat. Peel and dice the potatoes, add everything to the lentils along with the prunes, and simmer in a covered pan for 30 minutes. Then season and add a sweet and sour flavor. Cut the meat into pieces and return it to the soup.
