How to preserve tomato sauce

Ingredients for 1 servings:

  • 800 g tomatoes, ripe
  • 1 onion(s)
  • 2 garlic cloves
  • 3 tbsp tomato paste
  • 1 tsp cane sugar
  • ½ tsp paprika powder
  • some cayenne pepper
  • n. B. Fresh herbs (basil, oregano, thyme)
  • Oil for frying

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Peel and dice the onion and garlic cloves. Heat the oil in a pan and fry everything briefly. In the meantime, chop the washed tomatoes and add them to the pan. Add the salt, cayenne pepper, cane sugar, and paprika and bring everything to a boil. Cover and simmer for 30 minutes over low heat. Tip: You can sterilize the jars during these 30 minutes (e.g., in the oven at 150°C / pour boiling water over the lid). Wash and chop the herbs and add them to the pan shortly before the end of the 30 minutes. Purée the mixture with a hand blender to chop up any remaining peel. Heat everything again in the pan and season to taste. Pour the sauce into the sterilized jars up to about 1 cm from the rim, seal the jars immediately, and place the lids on. Once cooled, the sauce can be easily stored.
