Ingredients for 1 servings:

  • 6 eggs
  • 6 tbsp water, hot
  • 2 cups sugar
  • 1 cup sparkling wine (Sparkling wine cocktail Hugo, variety: elderflower-mint-lemon)
  • 1 cup rapeseed oil
  • 3 cups flour
  • 1 bag of baking powder
  • 1 cup cornstarch (potato or corn flour)
  • e.g. powdered sugar
  • e.g. lemon juice
  • Grapes, light, seedless, for decoration

The quantity “1 cup” refers to a standard coffee pot, which holds approximately 200 ml. Beat the eggs on high speed for three minutes until frothy, gradually whisking in the hot water (as you would for sponge cake batter). Stir in the sugar, adding the Hugo and rapeseed oil. Combine the flour, baking powder, and cornstarch well, pour into the mixture, and stir to form a smooth batter. Spread the batter evenly on a greased or parchment-lined deep baking sheet and bake in a preheated oven at 200°C (top/bottom heat) on the middle rack for 30 minutes. Finally, mix the powdered sugar and lemon juice to make a glaze, spread it on the cake, and decorate with the grapes.
