Hungarian spring onion casserole

Ingredients for 2 servings:

  • 1 bunch of spring onions
  • 250 g potatoes
  • 3 half bell peppers, red, green and yellow
  • 200 g salami, Italian or Cabanossi
  • 1 bunch parsley, flat
  • 100 g sheep’s cheese
  • 2 eggs
  • 150 ml sour cream
  • 200 ml whipped cream
  • salt and pepper
  • Paprika powder
  • Tabasco

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Boil the potatoes in their jacket potatoes, then peel, let cool, and dice. Wash the spring onions and slice into rings. Trim and dice the bell peppers and sausage. Chop the parsley and place everything in a lightly greased casserole dish and mix well. Whisk the eggs with the sour cream and heavy cream, season with pepper, salt, paprika, and Tabasco, and pour the topping evenly over the casserole. Finally, crumble the feta cheese and sprinkle it on top. Bake at 180°C for 30-40 minutes.
