Ingredients for 4 servings:

  • Potato(s), cooked the day before
  • 4 eggs
  • 8 slice(s) ham, raw
  • 2 onions
  • 1 package of diced ham
  • salt and pepper
  • Thyme
  • Fat, for frying
  • e.g. tomato(s)
  • n. B. Pickled gherkin(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Fried potatoes, eggs and bacon like in the Rhön

Slice the potatoes and dice or ring the onion, depending on your taste. Fry the ham cubes, then add the onions to the pan until translucent. Then add the potatoes and season. Turn frequently until the fried potatoes are cooked to your liking. In a second pan, fry four fried eggs and the ham slices. Place on top of the fried potatoes. If you like, you can also quarter tomatoes and/or pickles and place them on top. In the Rhön region, a basket of caraway bread is traditionally served with the dish. We always eat this dish when we go to the Enzian Hut in the Rhön region. The whole pan is simply placed on the table, and everyone gets a plate and cutlery and serves themselves.
