Indian meatloaf

Ingredients for 4 servings:

  • 750 g minced meat, mixed
  • 50 g oat flakes
  • 2 eggs
  • 1 egg(s), separated
  • salt and pepper
  • 1 tsp curry powder
  • 1 small onion(s)
  • 1 stalk(s) celery, alternatively celery salt
  • 1 apple, peeled, grated
  • 75 g raisins
  • 2 tbsp brown sugar
  • 1 tbsp desiccated coconut
  • 1 tbsp sweet cream
  • 3 tbsp tomato ketchup
  • curry powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Using the dough hook of a hand mixer, knead all the meatloaf ingredients, except the raisins and half the grated apple. Transfer half of the mixture to a microwave-safe casserole dish. Sprinkle the remaining apple and raisins over the meatloaf, leaving a 2-3 cm border. Cover with the remaining meatloaf batter. Brush the edges with egg white and press down. Cook at 100% for 13-18 minutes. Drain the meat juices and use them for the gravy. Mix the gravy ingredients and the meat juices well in a bowl. Pour over the meatloaf. Microwave at 100% for 3-4 minutes, until the meat is cooked through (internal temperature 60-65 degrees Celsius). Cover and let stand for another 5 minutes. Serve hot with rice and a fresh salad.
