Inge's onion soup

Ingredients for 4 servings:

  • 1 vegetable onion(s)
  • 2 medium-sized bell peppers, red
  • 500 potatoes, waxy
  • 3 tbsp olive oil
  • 150 g diced ham
  • 1 ¼ liters vegetable broth
  • some pepper
  • Paprika powder, hot
  • herbal salt if required
  • 250 g Cabanossi
  • Parsley, flat, chopped, for garnish

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

hearty, easy to make

Peel and halve the onions. Then slice or slice crosswise into thin slices. Trim the bell peppers and cut into thin strips. Peel and roughly dice the potatoes. Heat the olive oil and fry the ham cubes in it. Add the onion slices to the ham and fry while stirring. Add the bell peppers and potatoes and fry. Top up with vegetable stock and season with pepper, paprika, and herb salt, if desired. Simmer the soup for about 20 minutes. Peel and dice the Cabanossi. Add to the soup and heat through. Serve sprinkled with parsley.
