Ingredients for 4 servings:

  • 40 g yeast flakes
  • 65 ml soy sauce
  • 75 ml vinegar, e.g. apple cider vinegar
  • 2 cloves garlic
  • 200 ml neutral oil, e.g. rapeseed oil

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

vegan, with nutritional yeast and soy sauce

In a tall container, blend the nutritional yeast, soy sauce, vinegar, and garlic until smooth. Then, as you would make mayonnaise, continue blending and slowly add the oil until a thick, creamy dressing forms. This basic recipe is incredibly versatile and can be easily modified as long as the ratio of acid to fat remains the same. For example, you could replace the vinegar with lemon juice, the garlic with ginger, or some of the oil with nut butter. Just be sparing with the olive oil, as it doesn’t blend well and becomes bitter.
