Involtini – pork fillet rolls in tomato sauce

Ingredients for 4 servings:

  • 600 g pork fillet(s)
  • 200 g bacon or Parma ham in thin slices
  • 200 g cream
  • 50 g tomato paste
  • salt and pepper
  • butter
  • Paprika powder
  • oregano

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Prepare well!

Cut the pork fillet into approximately 1 cm thick slices. Season with salt, pepper, and paprika, and wrap each one in a slice of ham. Place the rolls in a buttered dish, place in an oven preheated to 200°C, and bake for 15 to 20 minutes. Then whisk the tomato paste (or more if desired) with the cream, pour the sauce over the rolls, season with plenty of oregano, and bake for another 15 to 20 minutes. Serve with rice, a green salad, or a baguette. The fillets are easy to prepare ahead of time. Cook for 15 minutes the day before, then mix the sauce, pour it over the meat, and let it rest, covered, overnight. The next day, return to the preheated oven for another 15 to 20 minutes.
