Irish farmhouse broth

Ingredients for 6 servings:

  • 1 kg beef (soup meat)
  • 1 cup peas, dried
  • 1 cup barley, washed
  • 2 stalk(s) leeks, washed and chopped
  • 1 small head of white cabbage, washed and cut into strips
  • 1 m.-large celeriac, green, washed and chopped
  • 1 large carrot(s), grated and diced
  • 1 small turnip(s), white, scraped and diced
  • 1 kg boiled or jacket potatoes
  • some black pepper, freshly ground
  • some salt

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Total time approx. 1 day 20 minutes

Irish farm broth

Soak the peas for 24 hours. Combine all ingredients (except the boiled potatoes) in a pot with 3 liters of water, season with salt and pepper, and simmer for about 3 hours. The broth is ready when the meat falls off the bone. Divide the meat into small portions and chop into small pieces, add some vegetables and broth, and 2 or 3 potatoes, and serve.
