Ingredients for 1 servings:

  • 500 g Flour (wholemeal spelled flour)
  • 100 g flaxseed
  • 100 g sunflower seeds
  • 100 g oat flakes, coarse
  • 2 tsp sea salt
  • 3 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • ½ liter of lukewarm water
  • 20 g fresh yeast

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

All ingredients should be at room temperature. Mix the flour and seeds. Stir the yeast into the lukewarm water until dissolved. Stir the yeast water, apple cider vinegar, and sea salt into the flour/seed mixture. Pour the dough into a greased loaf pan and let it rise for one hour. Preheat the oven. Place a heatproof bowl of water in the oven during baking. Brush the bread with a mixture of water and olive oil halfway through baking. Bake at 190°C for one hour.
