Irish Soda Bread

Ingredients for 1 servings:

  • 375 g wheat flour or spelt flour
  • 1 tsp, heaped baking soda
  • 1 tsp, leveled salt
  • 200 g soy yogurt (yogurt alternative)
  • 100 g soy milk (soy drink) or oat milk
  • 2 tbsp vinegar (fruit)
  • Flour, for the baking sheet

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Vegan soda bread

Mix the flour, baking soda, and salt in a mixing bowl. Then add the soy yogurt, vinegar, and milk. First, mix everything with a wooden spoon, then finish kneading gently with your fingers. The dough should feel soft and fluffy. Lightly dust a baking sheet with flour, place the ball of dough on it, and flatten it slightly. Use a sharp knife to make a cross-shaped cut about halfway up the loaf. This is important for the dough to bake thoroughly. Bake in a preheated oven at approximately 200°C for about 25 minutes. Keep an eye on the bread. I sometimes have to turn the temperature down to 175°C after 15 minutes because otherwise the bread would get too brown. In the end, the bread should have a rich golden color and a nice crust. It will be nice and soft on the inside. A typical feature of soda bread is the faint scent of seawater or seaweed—this comes from the soda. This bread is easy to bake, whether for a spontaneous dinner or even for Sunday morning breakfast. Traditionally, the bread is baked with buttermilk. Non-vegans can simply add 300 ml of buttermilk to the batter instead of the soy yogurt, soy milk, and vinegar.
