The color of the bread dough says nothing about whether it was baked with wholemeal flour or white flour. Dark coloring can also be achieved with dyes such as caramel. To be sure whether the bread is made from whole grains, it is worth taking a close look at the packaging or the list of ingredients. It is advisable to ask the baker directly if it is not otherwise apparent.
Wholemeal flour is only included in dark bread if it is specified there. Common terms are “whole grain”, “whole wheat” or “whole grain”. “Grain bread”, on the other hand, is not a clear indication of whole grain bread.
In the list of ingredients, designations such as “whole wheat flour”, “whole grain corn” or “whole oats” also indicate a proportion of whole grain in the bread. Incidentally, only bread that consists of at least 90 percent wholemeal flour may be sold as “wholemeal bread”.
