Ingredients for 4 servings:
- 4 pork schnitzels (approx. 120 g each)
- 4 tbsp pesto (jar)
- 4 small zucchini
- ½ bunch basil
- 1 can of chopped tomatoes (800 g)
- 50 g cream
- salt and pepper
- 150g mozzarella
- Oil, for the mold

Preheat oven to 200°C. Spread the schnitzel thinly with pesto on both sides. Wash and trim the zucchini, and coarsely grate it. Rinse the basil and shake it dry, then finely chop the leaves. Brush a baking dish thinly with oil. Place the schnitzel in the dish. Mix the canned tomatoes with the cream, grated zucchini, and basil. Season with salt and pepper. Pour evenly over the schnitzel. Thinly slice the mozzarella and spread it on top. Bake in the hot oven (middle rack) for about 25-30 minutes. It also tastes great with chicken breast fillet.
