Italian barley salad

Ingredients for 4 servings:

  • 200 g barley, pre-cooked (ready-made product)
  • 75 g tomatoes, dried in oil
  • 75 g olives, black
  • 1 stalk of basil
  • 4 tbsp Balsamic vinegar bianco
  • 250 g cherry tomatoes
  • 150 g arugula
  • 125 g mini mozzarella
  • 4 tbsp olive oil
  • 1 pinch(s) of sugar
  • some salt
  • some pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Boil the barley in salted water for 20 minutes, then rinse under cold running water. Let cool. Cut the dried tomatoes, marinated in oil, into bite-sized pieces. Quarter the cherry tomatoes and olives. Wash and clean the arugula. Combine all ingredients in a bowl. Mix the vinegar, oil, sugar, salt, pepper, and chopped basil leaves to make a dressing and pour it over the salad. Mix well.
