Italian Brandy Cake

Ingredients for 1 servings:

  • 200 g sugar
  • 200 g butter
  • 6 eggs
  • 40 g brandy
  • 1 pinch of salt
  • 300 g flour
  • 200 g potato starch
  • 1 packet of baking powder
  • 200 g dark chocolate coating
  • 25 ml milk
  • 20 g brandy
  • 100 g mascarpone
  • some granulated sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Cream the sugar and butter in a bowl until creamy. Gradually beat in the eggs. Add the brandy, salt, flour, cornstarch, and baking powder and mix everything into a smooth batter. Grease a cake pan and pour in the batter. Bake in a preheated oven to 180°C for about 40 minutes (test with a toothpick). Let the finished cake cool on a wire rack. For the glaze, melt the chocolate in a bain-marie, then stir in the brandy, milk, and mascarpone. Spread the mixture over the cake and sprinkle with sugar.
