Italian bread salad à la Albrecht

Ingredients for 1 servings:

  • ½ baguette(s) (should be 1-2 days old), diced
  • 100 g salami, spicy
  • 100 g arugula
  • 4 boxes of spring onions
  • 120 g cherry tomatoes
  • 20 ml balsamic vinegar, lighter
  • olive oil
  • Sea salt
  • 1 sprig(s) rosemary
  • 80 g Parmesan, sliced
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat a little olive oil and a sprig of rosemary in a pan. Roughly slice the salami and fry until crispy. Then transfer to crepe paper to cool. Add a little more olive oil and the diced baguette to the hot pan. Meanwhile, wash the arugula, remove the stems, and season with vinegar, oil, sea salt, and pepper. Add the crispy, cooled bread cubes and the salami chips to the arugula and mix everything well. Finally, stir in some shaved Parmesan cheese and drizzle the rest over the finished bread salad.
