Ingredients for 4 servings:
- 4 chicken breast fillets
- 1 tsp sage, chopped
- 4 slice(s) Parma ham, thin
- 2 tomatoes
- 2 tbsp olive oil
- 8 tbsp Marsala
- 150 g crème fraîche
- Salt and pepper, freshly ground
- rosemary
- Thyme
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Rinse the chicken breast fillets under cold running water, pat dry, and rub with pepper and sage. Wrap each fillet in a thin slice of Parma ham and secure with wooden skewers. Heat the oil in a pan. Fry the chicken breast fillets gently on both sides for about 15 minutes, then remove from the pan and keep warm. Add the Marsala to the pan juices, then stir in the crème fraîche and bring everything to a boil briefly. Season the sauce with salt and pepper. Peel and dice the tomatoes and add them to the sauce with the herbs. Remove the wooden skewers from the chicken breast fillets, then add them to the Marsala sauce and heat for about another 2 minutes. This dish goes well with any kind of pasta.
