Quick mixed vegetables with minced lamb or beef

Ingredients for 4 servings:

  • 1 zucchini
  • 1 eggplant(s)
  • 1 can of corn
  • 1 can green beans
  • 1 cup of cream
  • 2 m.-sized onion(s)
  • 500 g minced meat, preferably half beef/half lamb
  • 1 can of tomatoes, peeled
  • Garlic, to taste
  • some vegetable broth
  • Tomato paste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brown the minced meat, then gradually add the peeled and chopped vegetables. Pour in the broth and tomatoes, add tomato paste until thickened, and cook everything thoroughly. We like it al dente. Then, to round it all off, add the cream (more or less to taste) and season with salt and pepper. If you like, you can also top with grated cheese and briefly bake it with the sauce. It’s quick and easy, and you can add any other vegetables you like. Serve with rice or pasta.
