Ingredients for 6 servings:

  • 250 g butter
  • 2 tsp Italian herbs, dried
  • 1 small onion(s)
  • 3 cloves garlic
  • 4 tbsp tomato paste
  • 10 olives, black
  • 7 tomatoes, dried
  • salt and pepper
  • 1 sprig(s) rosemary

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Chop the olives, sun-dried tomatoes, onion, and garlic cloves into very small cubes and place them in a bowl. Add very soft butter (melt briefly in the microwave if necessary). Add the tomato paste and Italian herbs and mix well. Season with salt and pepper. Refrigerate at least 3 hours before serving. It can also be prepared the day before. The Italian herb butter tastes best on fresh baguette. I often serve it with other dips as an appetizer.
