Ingredients for 4 servings:

  • 600 g flour
  • 250 ml milk
  • 1 packet of dry yeast
  • 50 g margarine
  • 4 eggs, separated
  • 500 g ham
  • 500 g Gouda, grated
  • 500 g cocktail tomatoes
  • 100 ml tomatoes, pureed
  • 25 g crème fraîche
  • salt and pepper
  • possibly oregano
  • possibly pizza seasoning

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 55 minutes

Mix the flour, milk, dried yeast, and margarine. Add the egg whites to the dough. You’ll need the egg yolks later. Depending on the consistency of the dough, you may need more flour or milk. Season with a pinch of salt, pepper, and sugar. Let the dough rest for an hour. In the meantime, mix together the passata, crème fraîche, and egg yolks. Season with salt, pepper, and herbs to taste. We also added oregano and pizza seasoning. Cut the ham into strips and the tomatoes into slices. After the resting time, divide the dough into 2 or 4 portions, roll out into the thinnest oval possible, and place on a baking sheet. Spread the egg yolk mixture over the ovals, reserving a portion! Then arrange the ham strips and tomato slices in the middle and sprinkle the Gouda cheese on top. You can, of course, top with other ingredients such as mushrooms, corn, artichokes, bell peppers, or similar, if desired. Fold the ovals together like a typical pide and brush with the remaining egg yolk mixture. Sprinkle with a little more pizza seasoning and bake in a preheated oven at 200°C (top/bottom heat) for about 15-20 minutes.
