Jam & Co: Dandelion Honey

The perfect jam & co: dandelion honey recipe with a picture and simple step-by-step instructions.

  • 250 g Dandelion flowers without green
  • 1 kg Sugar
  • 1,5 l Water
  1. First of all: Please be sure to wear disposable gloves when collecting the flowers, otherwise you will have discoloration on your fingers that will be difficult to remove. In addition, pull the petals out of the green “stamps” while they are being picked (always in the sun and at noon).
  2. Put the flowers (without washing) in a large saucepan with the sliced lemon. Fill up with 1.5 l of cold water, press the flowers under the water and leave to stand for approx. 2 hours with the lid closed. Then bring to the boil, boil for 1 minute, turn off the stove and then let everything stand overnight. The next day, strain the whole thing through a cheesecloth and squeeze it out thoroughly.
  3. Add the sugar to the “juice” obtained, bring to the boil and then simmer for about 2 hours while simmering. Stir again and again. The juice becomes thick and golden yellow. Now pour into prepared jars and close tightly. Tastes delicious on bread, muesli or desserts, but also in tea. Of course you can also enjoy the “honey” pure. P.S.
