Ingredients for 1 servings:

  • 1 pineapple
  • 4 tbsp lemon juice
  • 1 tbsp agar-agar
  • 200 ml apple juice
  • 200 g sugar
  • 60 g sugar, fine

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes

Instead of gummy bears. Makes about 40 pieces.

Peel and quarter the pineapple, remove the core, and roughly dice the flesh and blend until smooth. Stir in the lemon juice and pass the mixture through a sieve. Whisk the agar-agar with a little apple juice. Bring the pineapple puree, the remaining apple juice, and the sugar to a boil. Simmer for 4 minutes, stirring occasionally. Stir in the agar-agar mixture and continue to simmer for another 2 minutes, stirring continuously. Let everything cool for 10 minutes. Line a shallow dish with cling film or aluminum foil, pour in the fruit mixture, and let it set (approx. 2 hours). Turn out, peel off the foil, and cut the mixture into cubes. Roll the mixture in the caster sugar. Let it dry at room temperature for another 2 days.
