Ingredients for 12 servings:

  • 220 g flour
  • 125 g sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 egg(s)
  • 200 ml buttermilk
  • 6 tbsp butter, melted
  • 1 tsp orange peel, grated
  • 12 tsp jam/jelly

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Muffins with jam filling

Grease the muffin tin thoroughly and dust with breadcrumbs or line it with paper baking cups. Combine the flour, baking powder, baking soda, and salt. Whisk the egg, then stir in the sugar, buttermilk, butter, and orange zest. Add the egg mixture to the flour mixture and stir until just moistened. Fill the muffin tin halfway with batter, add 1 teaspoon of jelly, and top with the remaining batter. Bake at 180°C (convection oven, preheated) for about 20 minutes.
