Ingredients for 4 servings:
- 800 g potatoes (roach or floury potatoes)
- 5 tbsp olive oil
- 1 pinch of herbal salt
- 1 tsp black pepper, freshly ground
- 3 tsp rosemary, dried

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Peel the potatoes and cut into wedges. Meanwhile, preheat the oven to 200°C (400°F). Place the potato wedges in a bowl and drizzle with olive oil. Let the oil soak in for 3-7 minutes, then arrange the wedges on a baking sheet lined with parchment paper. Spread the spices and herbs evenly over the potatoes. Bake for 25-30 minutes. This dish goes well with all Greek dishes and is especially good with grilled meat.
