Baked potatoes

Ingredients for 4 servings:

  • 1 ½ kg potatoes, the fresher the better
  • 1 lemon(s)
  • 1 cup water
  • 4 tbsp olive oil
  • 1 tsp salt
  • 1 tbsp paprika powder, sweet
  • 2 cloves garlic

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Greek style

Peel the potatoes and chop them very roughly (not too small, so they don’t dry out during baking). Squeeze the lemon and mix the juice with the remaining ingredients in a large bowl. Add the diced potatoes and garlic cloves and mix everything well. Then spread the potatoes, including the liquid, on a baking sheet. Bake at 200°C for about 45 minutes, turning occasionally. Excellent as a side dish to hearty meals or as a main course, for example, if you bake some chicken drumsticks with them. The potatoes also taste good cold, and my 8-year-old daughter can’t get enough of the Greek potatoes.
