Ingredients for 4 servings:

  • 800 g Jerusalem artichoke
  • 2 tbsp olive oil
  • salt and pepper
  • 2 clove(s) garlic, chopped, depending on your taste
  • 1 handful of chopped walnuts, 4 – 8 kernels, depending on your taste
  • 2 tbsp sage leaves, chopped
  • 2 tbsp parsley, chopped
  • lemon juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat oven to 175 degrees Celsius. Clean the Jerusalem artichokes, pat off any moisture, and cut into 1 cm thick slices. Add oil to a non-stick pan and sear the Jerusalem artichoke slices until golden brown on both sides, then continue frying over medium to low heat. After 15 minutes, transfer to a shallow baking dish along with the oil and sprinkle with chopped walnuts and garlic, salt, and pepper. Bake in the oven for another 10 minutes. Season to taste and serve. Variations: Sprinkle an additional 2 tablespoons of sage over the roasted food along with the walnuts and garlic. Then continue as above. Fry thicker slices in a pan with salt and pepper for 10 to 15 minutes until golden brown. Then add (only) the sliced ​​garlic for the last 5 minutes. Season to taste with salt, pepper, and lemon juice.
