Joe’s Lime Salmon from Grill

Ingredients
 

Marinade:

  • 0,75 tbsp Lime juice
  • 0,75 El White balsamic vinegar
  • 0,75 tbsp Dijon mustard
  • 0,75 tbsp Honey
  • 0,75 tbsp Chives in rolls
  • 0,333333 tsp Fleur de Sel sea salt
  • 1 Tsp tip Granulated garlic
  • 1 Tsp tip Black pepper from the mill
  • 1 pinch Cayenne pepper
  • 20 ml Extra virgin olive oil

Salmon:

  • 500 g Salmon fresh
  • 1 Fresh lime thinly sliced
  • 1 Disposable grill pan

Instructions
 

Marinade:

  • Mix well all the ingredients for the marinade, except for the oil. Then while stirring add oil in a fine stream and beat to an emulsion!

Salmon:

  • Carefully cut into about 2/3 of the salmon. Spread the marinade on the salmon and in the incisions! Put half a slice of lime in each incision. Then put it on the grill pan!
  • Smoke for one hour in the prepared smoker at 110 degrees. Add some beech wood to the charcoal for the smoky taste!

Modification:

  • The salmon can also be cooked in the oven! Then the smoky taste is missing! 🙂 Also 110 degrees 1 hour!
  • There was also potato salad! Lime risotto also tastes great with it!
