- 350 g Salmon fresh
- Lemon pepper
- Sea-Salt
- Juice of a lime
- 4 tablespoon Cream
- 2 tablespoon Chives
- 3 Carrots
- Juice of one orange
- 0,125 liter Vegetable broth
- 1 tablespoon Butter
- 1 piece Hazelnut large ginger
- 1 teaspoon Sugar brown raw sugar
- Peel the carrots and carve the sticks in the vegetable stock and cook until al dente. Drain the carrots. Heat the butter, add the sugar, add the ginger and the carrots lightly, add the orange juice and finish cooking
- Season the salmon with lemon pepper and the sea salt on both sides and sauté in the pan on both sides, pour the cream on and let it simmer slightly, add the lime juice and the chives and let them steep.
