Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Fine-pored thanks to starch, moist thanks to chocolate, aromatic thanks to cocoa – this is what the perfect marble cake tastes like!
Preheat the oven to 175°C. Grease the pan and sprinkle with breadcrumbs. Beat the butter, sugar, vanilla sugar, and eggs with the whisk of a hand mixer until creamy. The sugar should dissolve completely. Combine the flour, cornstarch, and baking powder. Stir into the batter alternately with the milk. Stir quickly, otherwise the flour will start to swell and the batter will become dry. The batter should fall heavily from the spoon. If it doesn’t, level it with flour or milk. Divide the batter evenly between two bowls. Add the grated chocolate and cocoa powder to one half and stir in. First, spread the light batter evenly over the bottom of the pan, then pour the dark batter over it and smooth it down. Marble the batter from bottom to top with a fork and smooth it down again. Bake immediately on the middle rack for about 60 minutes. Do the toothpick test! Allow to cool slightly, but remove from the tin while still warm and dust with icing sugar if desired.
