Ingredients for 4 servings:
- 1 kg turkey breast
- 1 large onion(s)
- 200 ml chicken stock
- n. B. Paprika powder, sweet
- e.g. garlic powder
- n. B. salt and pepper, black
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 2 hours
First, pour the stock into an ovenproof dish. Thinly slice the onion and arrange it in the dish, ensuring the turkey breast rests on the bed of onions. Rub the cold turkey breast one after the other with salt, black pepper, garlic granules, and sweet paprika. Place the breast on the bed of onions and bake at 180°C (top/bottom heat) for about 1 3/4 hours, basting with a little stock every now and then. I also use a core thermometer, which I place in the center of the breast. Once the core temperature reaches 70°C (168°F), reduce the oven temperature to 75°C (167°F) and allow the heat to dissipate slightly. Then allow the core temperature to rise to 73°C (165°F). Remove the now thoroughly cooked and juicy turkey breast, carve it, and serve.
