Ingredients for 1 servings:

  • 220 g whole wheat flour
  • 200 g wheat flour (type 550)
  • 130 g oat flakes
  • 50 g pumpkin seeds
  • 50 g sunflower seeds
  • 50 g flaxseed
  • 400 ml water, lukewarm
  • 20 g yeast, fresh
  • 100 g quark (low-fat quark or 10%)
  • 2 tsp salt
  • n. B. Spelt flakes for sprinkling
  • n. B. pumpkin seeds for sprinkling
  • n. B. Sunflower seeds for sprinkling
  • n. B. Flaxseed for sprinkling

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 50 minutes

Dissolve the yeast in the water and let stand for about 5 minutes. Combine the flour with the oats, salt, and seeds. Knead this mixture with the yeast water and the quark into a dough. Cover and let it rise in a warm place for at least an hour. Knead the dough again and shape it into long balls of any size. Mix together the topping ingredients and lightly press one side of the balls into the mixture. Then, cover and let the balls rise in a warm place for at least 40 minutes. Bake at 220°C (fan oven) for about 30 minutes, until the rolls are lightly browned.
