Ingredients for 1 servings:

  • ½ cup butter
  • ¾ cup sugar
  • 1 m.-sized egg(s)
  • ½ cup sugar

  • ½ cup oil
  • ½ cup buttermilk or sour milk
  • 1 cup(s) flour
  • 3 tbsp cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 cup(s) pumpkin flesh, raw, grated
  • 80 g chocolate, chopped or chocolate chips
  • possibly powdered sugar for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Super quick, easy, and delicious. Makes 18.

One cup equals 250 ml. Cream the butter until fluffy, then add the sugar (brown sugar is fine) and the eggs, alternating in the order listed. Stir in the oil, then stir in the buttermilk or sour cream. Sift the flour, cocoa powder, baking powder, and baking soda and fold in. Finally, stir in the grated pumpkin and chocolate. Pour into a muffin tin and bake at 200°C for about 25 minutes. Dust with powdered sugar, if desired.
