Juicy pancakes with kefir

Ingredients for 4 servings:

  • 300 g flour
  • 10 tbsp sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 1 packet of baking powder
  • 1 pinch of baking soda
  • 4 eggs
  • 1 cup kefir, 500 g
  • Oil for frying

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

First, combine all the dry ingredients (flour, sugar, vanilla sugar, salt, baking powder, and baking soda) in a bowl and mix with a spoon. In another bowl, combine the kefir with the four eggs. Gradually stir the dry ingredients into the kefir-egg mixture. Heat a little oil in a pan over high heat. When the pan is hot, drop batter into the pan and cook over low heat to form pancakes. Tip: If you don’t have kefir, you can substitute it with the same amount of buttermilk.
