Ingredients for 18 servings:
- 100 g almonds
- 100 g hazelnuts
- 100 g peanuts, unsalted
- 75 g desiccated coconut
- 75 g oat flakes, wholegrain
- 100 g sultanas
- 100 g date(s), dried
- 100 g apricot(s), dried
- 125 g honey
- 50 g sugar
- 3 eggs
- some cinnamon powder
- pinch(s) of salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Grind about half of the nuts and chop the other half (it’s best to buy them already). Finely chop the dried fruit. Beat the eggs with the sugar until frothy and stir in the honey. Add a pinch of salt. Then slowly and evenly stir in the chopped and ground nuts, the oats, coconut flakes, and the dried fruit. Season with cinnamon, if desired. Spread the mixture evenly, about 1 cm thick, on a baking sheet lined with baking paper. Bake in a preheated oven at 180°C (top/bottom heat) for about 20 minutes. Then cut into evenly sized bars and let cool. I made about 18 bars. 1 bar (approx. 60 g) had the following nutritional information: Energy: 290 kcal; Protein: 7.5 g; Carbohydrates: 23.4 g; Fat: 16.2 g
